Why Wine Pairing Matters
The right wine can elevate a great steak from delicious to unforgettable. At Blu' Steakhouse, our curated wine cellar features over 200 selections from Napa Valley, Bordeaux, Burgundy, Tuscany, and Argentina. Our sommelier is always available to guide your pairing, but here are our top recommendations for each type of steak on our menu.
Filet Mignon: Pinot Noir or Merlot
The filet mignon is the most tender cut, with a delicate, buttery flavor. It needs a wine that complements rather than overwhelms. A Burgundy Pinot Noir, with its silky tannins and cherry notes, is the classic match. For our Filet Mignon Prime ($45), try a Domaine Drouhin or an Erath Pinot Noir. If you prefer something fuller, a right-bank Bordeaux Merlot blend works beautifully.
Tomahawk Ribeye: Cabernet Sauvignon
Our 32oz Tomahawk Prime ($200) demands a bold, structured wine. Napa Valley Cabernet Sauvignon is the gold standard — its firm tannins cut through the ribeye's rich marbling while dark fruit and oak notes complement the charred exterior. Look for producers like Caymus, Silver Oak, or Jordan. For the Wagyu Tomahawk ($500), consider a Super Tuscan for its complexity.
NY Strip: Malbec or Syrah
The NY Strip ($56) has bold beef flavor with moderate marbling. Argentine Malbec is a natural match — its plummy fruit and soft tannins pair beautifully. Alternatively, a Northern Rhone Syrah or Australian Shiraz brings peppery spice that enhances the strip's savoriness.
Wagyu: Champagne or Barolo
A5 Wagyu's extreme richness calls for something unexpected. Champagne or sparkling wine, with its acidity and effervescence, cuts through the fat beautifully. For a red option, aged Barolo from Piedmont offers enough tannin and acidity to balance the buttery Wagyu while adding truffle and rose petal complexity. Our Wagyu Ribcap ($70) is especially magical with these pairings.
